what is difference between safetensor and pytorch model

Do we need both models for our use case?
if not then which model is required because a safe tensor is more like updated weights after 2 months of model release.
In the comment section, they mention "- Adding safe-tensors variant of this model ". I am not sure but this is probably an updated and optimized version.
